A genoise sponge layered with strawberries macerated in a little sugar and lemon, and cream whipped only to soft peak so it stays light. No jam, no fruit filling from a tin — when strawberries are out of season we say so and suggest mango or blueberry instead.
This is the cake to order for someone who says they 'don't really like cake'. It is the least sweet thing on our menu.
Best eaten the same day. Keep refrigerated and take it out twenty minutes before cutting.
