A deep, barely-sweet chocolate sponge is soaked in sugar syrup, layered with whipped ganache, then covered in a Belgian dark chocolate glaze that sets to a mirror finish. We use 55% couverture — not compound — which is why it tastes like chocolate rather than like sugar.
It is available eggless on request with no change in price and, honestly, no change in texture: we use a cultured-curd base that keeps the crumb soft for three days in the fridge.
