We start soaking the fruit in October. Raisins, currants, candied peel, dates and cherries go into orange juice and spice and sit until they are plump, then get folded into a dark, treacly batter with cinnamon, clove and nutmeg.
Keeps two weeks at room temperature and improves for the first four days. This is the cake to courier to relatives in another city.
Available with or without rum soaking — please specify. Contains eggs; an eggless version is available on request.
